A Basque Gastrodictionary
Txikiteo: The first rule of the txikiteo club is: there are no rules. An approximate definition of ‘txikiteo’ could be: going from bar to bar, eating a pintxo and drinking a glass of something (the usual is a low-alcohol beverage, not cocktails!) in each. The txikiteo is done standing up, in front of the bar full of pintxos and surrounded by people you don't know (but that you could end up meeting.)
And this is precisely what you’ll do with us: pure txikiteo, flying from bar to bar, tasting the most renowned specialty of each in a genuinely Basque environment and surrounded by locals that, y’know, you don't know...but that you could end up meeting.
Pintxo: A piece of miniature cuisine that started off as something simple (a portion of potato omelette, a slice of ham on bread...) and that the bars of the Basque Country improved upon over time, making it more complex in order to attract more customers. The story is exciting and there are as many versions as there are historians. On our tour you’ll get to know some of them, as well as many other curiosities about the cult of the stomach that exists in the Basque Country.
Drinking: This is the other great religion (along with Eating) in the Basque Country. Wine and cider have been favorite drinks of the Basque people for the last five centuries, although beer has been prevailing in recent years. Did you know that in the 16th century, Basque sailors hardly suffered scurvy on long sea voyages, thanks to the cider they drank?
Txakoli: Typically Basque dry and sparkling white wine whose grapes are grown in vineyards near the Cantabrian Sea. It is ideal to accompany fish dishes...or pintxos. Nothing more to add.
Cider: Low-alcohol beverage obtained from fermented apple juice. Slightly sweet, slightly bitter, it has only one danger: it is drunk as easily as water.
Zurito: Short drink of beer (about 20-25 cl.) Ideal to accompany pintxos. The term ‘zurito’ is exclusive to the Basque Country. If you go to Madrid and ask for a 'zurito' no one will understand you (unless the bartender is Basque, of course).

Ernest took our family on a fantastic Pintxos tour of San Sebastián, not only did we visit lots of great bars we learned lots about the city and the Basque area around. Ernest was a great host and most interesting. Would definitely do this again. Food was superb, in each bar Ernest recommended the best Pintxos and the best accompanying wine/beers/cider. This was a great highlight of our holiday.

Nora and Mikel have done a great job in receiving and accompanying a group of friends from abroad at very short notice. My friend and I are traveling around Spain and we can definitely say that the Pintxo Tour we did with Ernes was one of the highlights of our trip. What a great day! First of all we understood the big difference between tapas and pintxos, oh my god! We spent the day with Ernes at his hometown, Hondarribia, which is a stunning medieval town with the most beautiful old quarter and he gave us a lot of interesting information about it as well. We visited 5 different restaurants (one of them has a Michelin star) where we tried 5 different pintxos combining them with different wines and drinks. There is no words to describe the taste of those pintxos and wines…it’s just….amazing! Ernes was the best guide we could have, we spent a full day with him and we would spend many more. We absolutely recommend Ikusnahi and Ernes, the best company and guide that will make your stay in the Basque Country the best ever!
My husband and I spent 3 days with Ernes while we were in San Sebastian - one day he showed us round the city and we enjoyed a wide variety of pintos with him at five of his favorite places. The next day we enjoyed a private cooking class at a local gastronomy club and then he showed us his home village of Hundarribia. We spent our third day in the mountains; we visited the very interesting Sanctuary of Arantzazu and took a 9 mile hike in the beautiful Aizkorri-Aratz Natural Park. Ernes is a fantastic guide - enthusiastic, energetic, knowledgable and flexible. His focus on cultural, gastronomic and active adventure fit our interests perfectly. There is so much to do in the area - we highly recommend spending time with him to enhance your experience.
We book a tour with Ernesto. We visit the best restaurants for pintxos and expend a very good time. Ernesto has a great acknowledge about the basque Country. We will do it again for sure.
Ikusnahi Tours was wonderful tour company. We did the “San Sebastian tour + pintxos” and we really loved it! We enjoyed the best views of the city and the tour of the old Part of San Sebastian was a great experience. The guided tour at the beginning of our trip- proved to be a smart decision because we got to discover the city as only locals know it. After the Sightseeing tour we did the walking tour combined with the pintxo tasting. The pintxos were really good and the local wines, cider and beer were an incredible combination. We learned alot about Basque Country and all it has to offer and we totally loved our tour guide, Ernest- who spoke spainish, basque and english fluently. We spent a fantastic week in San Sebastian and chose Ikusnahi for a tour of San Sebastian. Ernes took us on a very interesting and informative walking tour of San Sebastian. We walked around the old town learning a lot about the history of this fantastic city. San Sebastian has not only the gastronomy, it has has a lot of history also! We had the most awesome pintxo tour with Ernest on our recent trip to San Sebastian. Close to 4 hours with delicious pintxos in different styles through many different bars, local wines and interesting conversation about Basque culture. We really enjoyed everything we tried (don’t miss the local anchovies!) and were very impressed with the structure and content of the tour, the history of the city and the perfect marriage food&wine. We also got many suggestions for other activities for the rest of our journey in Basque country. But this tour was probably the highlight of our time in San Sebastian and I can really recommend it! Un grupo de amigas y yo hicimos el Pintxo Tour de San Sebastián con Ernes y pasamos un día maravilloso con un guía excelente. El tour duró unas 3 horas y tuvimos la oportunidad de probar pintxos de 5 restaurantes completamente diferentes, desde el más tradicional al mas moderno, pero todos ellos con mucho encanto, personalidad y una variedad de pintxos y bebidas fabuloso. Para los amantes de la gastronomía que quieran probar la cocina vasca junto con los vinos y txakolis de la zona, es un must. Ernes es un guía excelente que hace que la experiencia sea inolvidable. No solo sabe muchísimo, sino que es encantador y divertido. Desde el primer minuto, te sientes como en casa con él. Gracias por un día genial!
Me he decidido a escribir por primera vez en esta página por el excelente trato recibido por Ernes! A mi mujer y yo nos apasiona viajar y siempre intentamos conocer las ciudades que visitamos de una manera distinta. Con Ikusnahi tuvimos la oportunidad de conocer la historia y las costumbres de Donostia de la mano de Ernes que nos llevó desde la parte vieja hasta la playa en un recorrido muy interesante plagado de historia y anécdotas.Muchas gracias Ernes por una tarde tan interesante!

Fuimos un grupo grande de 47 mujeres a conocer San Sebastian de la mano de Ikusnahi. Todo el grupo acabó encantado con el buen trato que se mostró por parte de Ernes e Isabel.
